  • Add the Flavors: Add the garlic, zucchini and vegan sausage to the mixture. Let it cook for a 3 4 minutes.
  • Spice It Up: Mix in the smoked paprika, thyme oregano and cayenne pepper ensuring that the vegetables and sausage are thoroughly coated with the spices. Make sure to stir everything for even distribution.
  • Add the Rice: Add the rice. Diced tomatoes (including their juice), to the pot. Mix everything together thoroughly.
  • Simmer: Pour in the vegetable broth. Bring the mixture to a boil. Then lower the heat cover it up. Allow it to simmer gently for about 20 to 25 minutes until the rice is fully cooked.
  • Garnish and Serve: After cooking add salt and pepper according to your taste. Before serving decorate with sliced onions and fresh parsley.
